What is Wagyu?

An exclusive dining experience would never leave a beefsteak from its menu, and one of the most high quality meat ever made for a beefsteak is Wagyu. Wagyu (literally Japanese cow) refers to several breeds of cattle, the most desired of which is genetically predisposed to intense marbling and to producing a high percentage of oleaginous unsaturated fat.

The meat from such wagyu cattle is known for its quality, and demands a high price because of their uniqueness in breeding and feeding techniques, such as massaging and adding beer or sake, calcium and vitamins to their feeding regimen. Massaging may have been introduced to prevent muscle cramping, so the Wagyu cattle would be more relaxed and producing tender meat. Nowadays, several country outside Japan are also breed wagyu.

There’s Australia, with their Australian Wagyu Association as the largest breed association outside Japan, and United States which has crossbreeded Japanese wagyu with Angus cattle, their product is known as the American Style Kobe Beef.
